We have developed this hearty sourdough in response to current advice to increase the range of plant products in our diet and to increase our fibre intake. This sourdough has no fewer than 15 different grains, seeds and spices including 5 'ancient grains' (unrefined wheat varieties that have not been modified throughout centuries of selective cultivation which are purported to have additional nutritional advantages). It has a dense crumb and delicious taste and we bake it in tins to give an oblong shape for easy slicing. It's even better the second and third day after baking as its flavours develop and the crust becomes softer.
