Rye is naturally lower in gluten than wheat. Our 100% dark rye sourdough loaf is created slowly over 12 hours. We take our starter which contains wild yeasts and lactobacillus and add 100% organic wholemeal dark rye flour and a touch of salt. The resulting bread has a slighlty sour taste complemented by the natural sweet earthy taste of rye with a delicious chewy tecture.
